
Here is the recipe Megan referred to in her "Perfect Day" post. It is super easy and a great low calorie meal that can last a few days. Most health food stores also sell the butternut squash already cut into small pieces. I got mine from Trader Joes. I am already excited for the left overs tonight for dinner.
